Where it all began - Neil as Sommelier
- Neil as Sommelier - Hayman Island Resort 1987 - 1990. Tough job some one had to do! Establishing cellars worth approximately three quarters of a million dollars with 38,500 bottles. An affair that started in 1982 when resigning the Police Force and travelling to Europe - who thought it would have lead to a life-long love affair and career in the wine industry as Sommelier. Hospitality and Wine Educator and Wine Proprietor.
The picking team 2004
- Part of the picking crew for Tiger Ranch Pinot Noir 2004 at Lake Barrington Estate Vineyard. Dad, Carol, Miriam, Neville, Barry, Leigh, Richard & Jane. INVISIBLE - Stuart, Sarah, Matt, Pam, Mom & Myself.
The Traditional way of treading the grapes (Pigeage)
- Important to wash feet first!
Pigeage
- The long hours of treading the grapes helps to extract maximum colour, flavour and tannin
Remontage
- The traditional method of "Plunging the Cap" to keep the skins immersed in the fermenting wine rather than bonding with the CO2 drifting to the surface and drying as a cap above the "Must" or fermenting grape juices is known as Remontage. Take note of the CO2 foaming to the top when released from under the skins.
Pinot into Barrels
- After fermantation the red wine is Pressed from its skins (the marc) and run off into barrels or tanks for maturation. The 2004 Pinot pictured is going into French Oak Hogsheads (300 Litres) and Barriques (225 Litres)
New Plantings at Tiger Ranch
- Stage 1 of the replanting of Tiger Ranch Vineyards with the planting of clones 777, 114, 115, 8048 & 8104. Stages 2 & 3 will occur later this year and 2006. The original vineyard plantings of 1990 have been lost to time but we are re-establishing on our new property.
